Operators, Not Consultants
The company was formed by three people who had run waterside restaurants themselves and had all made the same expensive mistakes: a terrace laid out for photographs rather than for service, a kitchen positioned so that every plate crossed the guest area, a menu that could not be executed at four hundred covers, and a licence that did not cover the extension the whole business depended on. Everything we now do for owners is a systematic correction of those errors, applied before a season rather than during it.
We work as operators rather than advisers. When we take a venue on, our own managers run it, our own systems handle purchasing, rotas, stock and cash, and our head office carries the licensing, payroll coordination and reporting. Owners receive the trading result and a monthly statement rather than a consultancy report and a wish. Where an owner prefers to keep their own team, we provide a defined support package instead, but we say plainly which of the two will work better for their site.
The waterside part matters. Terrace permits are issued per municipality with rules on furniture, shade, heaters, noise, hours and distance from the water; wind decides whether an outdoor service is possible on a given evening; and salt, damp and flooding shorten the life of everything from parasol mechanisms to electrical sockets. We hold that knowledge across twenty-six sites, which is why a new venue under our management passes its first inspection rather than discovering the rules afterwards.
