Full Operational Management

We run the venue end to end: management team, recruitment and training, rotas and payroll coordination, menu development and costing, purchasing and stock, service standards, marketing and reservations, cash control, licensing, maintenance and monthly reporting. The owner keeps ownership and receives a clear share of the trading result under a published fee structure. Most contracts begin with a ninety-day stabilisation period focused on compliance, kitchen workflow and pricing before any visible changes are made.

Turnaround Projects

For venues that are losing money, a fixed-length intervention: a full diagnostic covering trading data, layout, menu, staffing, purchasing and compliance; a written plan with costed actions and expected outcomes; and an operator on site to implement it. We are honest about the cases where the location, the lease or the permit cannot support a viable business, and we say so in the first week rather than after six months of fees.

Terrace Design and Equipment

Layout drawings, cover planning, service-route analysis, and specification of furniture, parasols, wind screening, heating, lighting and flooring chosen for salt, wind and daily handling rather than for a showroom. We manage procurement, installation and the permit application, and we train the team to strike and store everything in the time available before a storm. Existing terraces can be reviewed and re-laid without new purchases where the problem is arrangement rather than equipment.

Staffing and Training

Recruitment campaigns, contracts, rota systems, payroll coordination and a training programme covering service standards, allergen handling, cash and card discipline, upselling without pressure, terrace strike procedures and first aid. We also supply relief managers, chefs and supervisors at short notice, which for a seasonal venue is frequently the difference between trading and closing for an evening. Training materials are provided in two languages as standard.

Concessions for Municipalities

We tender for and operate promenade kiosks, beach bars, park cafés and municipal restaurant concessions, handling the bid, the compliance framework, the seasonal build and the operation itself. Municipalities receive a fixed rent or a share of turnover with transparent reporting, an agreed standard of maintenance and litter management, and a single named contact. References and previous project summaries are available to any authority preparing a tender.

New Openings

From concept to first service: feasibility and footfall study, layout and kitchen design, permit and licence applications, supplier contracts, brand and menu development, recruitment, training, marketing and a launch plan with realistic first-season targets. Where a site cannot support year-round trading we design a seasonal model deliberately, rather than building a business that stands empty and deteriorating for seven months of the year.
